according to sportscenter enough chicken wings are made on super bowl sunday to circle the earth.. here is my contribution..

i actually pride myself on my wings.. if you wanna give ‘em a try keep reading..
(good for about 4 lbs. of wings)
CIDER VINEGAR- 1 cup
VEGETABLE OIL- 2 tbsp
WORCESTERSHIRE SAUCE- 2 tbsp
CHILI POWDER- 2 tbsp
RED PEPPER FLAKES- 1tsp
SALT- 1 tsp
CHILI SAUCE OF YOUR CHOICE- 1 tbsp
SPICY BROWN MUSTARD- 2 tbsp
GARLIC- 4 cloves, minced
DRY OREGANO- 1 tbsp
mix all ingredients in gallon zip-lock bag and marinade for at least 4 hours. spread them out on a sheet pan and bake at 450-F for about 15 mins then kick your oven on BROIL for about 5 mins or untill they are nice and brown..

i have trying to make an effort to cook more at home like i do at work.. i mean doing more with less, being more creative, and trying things i am interested in or want to learn more about.. as i was wandering the store i was wish i was eating ramen instead.. Ding. i never like to half ass anything so i swooped up this chicken thinking i’ll do roasted chicken for dinner tonight and make broth with the bones for ramen tomorrow..


i don’t know what to call these potatoes but this is my favorite way to do them..

1/4rd, tossed with oil and S+P then roasted at 250 for 2 hours or so then mashed with butter and cream in a mixer..

stepping stone number one to my bowl of ramen..
roasted chicken with roasted mash potatoes and ratatouille with tomato gravy.. delish. however it was no ramen.. i took the chicken bones and rubbed them with red miso and roasted them almost to death, put them with ginger, onion, tomatoes, and whatever else and started to wait..

after a few hours i strained it and tried to sleep…
5 hours of sleep, 9 hours of work, and 2 hours of waiting for everyone to get home later i had my precious noodles in hand.. *insert very eloquent, well written, description of life giving yet still humble bowl of noodles and broth here*

the point of the story is point of everything else.. food is a journey. animals and plants grow, food takes time to cook and should be afforded the opportunity to be enjoyed. it took 6 hours of total cooking time for this bowl of ramen and i ate it like i had 6 hours to enjoy it..

sometimes people ask me how i come up with dishes or where i get ideas from so here it is…
the biggest thing for me is i read, watch, listen to anything i can. any book, magazine, article, TV show, demo, or if i can take a second to watch someone cook i try to take advantage. you never know what you will pick up or from where so i keep a little notebook and with me everywhere i go, i little note leads to research, leads to a little playing around leads to a dish. case in point…
my chef says, “we have polenta to use” so i think a bit and take some notes… 

notes lead to a little research, leads to looking around the walk-ins, leads to an idea or two…

an idea or two leads to some playing when i have a few extra minutes during the day…

after playing with the plating, flavor combos, and mise en place, a a decision is made and a sample plate is given to the front of the house and i will usually write a recipe if need be. this all happens by monday so a special can be run all week. after we have run through a couple we usually make a few tweaks to produce the best product the most efficiently. after a few days we have it down and by the weekend its perfect…

final product: pan-seared chicken breast with parmesan polenta, roasted artichoke hearts, semi-dried tomatoes, and asparagus with asparagus and herb cream sauce.

i take a lot of pleasure in the simple things in a kitchen. the things that take so little effort but the results are so beautiful. like a nicely emulsified vinaigrette, a perfectly made butter sauce, or a killer oven roasted whole chicken…

i mean all you do is put it in the oven then take it out, but in that time so many things happen to make those two moves seem like a thousand…

oh, and look at the juices that came off this guy, unreal.
anyway the point of this is if you’re a cook who takes care to do things, even things as simple as a roasted chicken the right way, cheers.
