OPENING DAY…

a lot of misinformed people out there that will tell you that baseball is America’s pastime.. baseball is deece at best, BBQ is the real American pastime and sunday was opening day over here at the house.  to make it even better we had a bunch of the fam over to see whats good.. and that is what this is all about..  if you come by the ricks house on BBQ day you are sure to get ribs..

these baby backs sat in a brown sugar, salt, red curry, and apple cider vinegar brine over night..

then got slathered in achiote, orange, and ginger marinade over another night..

after 5 hours in hickory smoke.. i usually don’t use woods like hickory or mesquite, i like to try out other things but the hickory did really nice today..

a quick last sear..

over at the que labs SITE-B.. i did some pretty basic chicken to go with the ribs..

i think that today was over all a success, i am trying to go from a lump charcoal/ wood smoking method to all wood and i’ll admit the smoking job could have been better.. i work on my BBQ like its a sport and this summer its on!

i set a goal to compete in the world series of BBQ in the next few years and win in the next ten.. keep it tuned to see what i’m working on and check for some killer recipes!
